What happens when a 13-year-old makes one of her favorite meal - Red Coconut Curry Noodles - for the whole family? In today’s video, my daughter takes over the kitchen to cook one of her go-to plant-based dinners — and let’s just say she’s OBSESSED with this recipe! Not only is it delicious, but it’s also 100% Whole Food Plant-Based (WFPB), oil-free, and perfect for busy families. Whether you’re a parent looking for easy kid-friendly meals, or a beginner trying to figure out what to eat on a plant-based diet, this recipe is proof that tasty and healthy CAN be simple. INGREDIENTS: 1 package extra firm tofu, pressed (400g) 1 14oz package rice noodles (400g) 2 pounds baby bok choy, chopped up into pieces (900g) Curry Sauce: 1 tsp sesame oil (optional) (5g) (or use water or broth) 3 cloves of garlic, minced (9g) 1 can of low-fat coconut milk (or use full fat) (400ml) 3 tbsp red curry paste (45g) 2 tbsp maple syrup (or date paste) (30g) 1 tbsp chili garlic sauce (15g) Toppings (optional, pick any or all): 1 cup fresh bean sprouts, blanched with hot water (50g) 1/4 cup green onions (25g) 1/4 cup Thai basil, chopped (10g) 1/4 cup fresh cilantro (10g) 1/4 cup roasted cashews or peanuts (30g) 1 lime, quartered, for drizzling on each serving (80g) INSTRUCTIONS: Preheat your oven to 400°F (200°C) or air fryer to 375°F (190°C). Press the tofu for 30 minutes (it’s okay if you don’t have time to press it). Cut it into small rectangles or tear into chunks. Bake or air-fry for 10-15 minutes until crispy. Cook the noodles according to the package directions, rinse with cool water, and set aside. For the sauce: heat sesame oil, water, or vegetable broth in a skillet or wok. Add garlic and cook for about 30 seconds until fragrant. Stir in the remaining sauce ingredients, whisk, bring to a boil, then reduce heat and simmer for 7-10 minutes until thickened. For the bok choy: heat in a large frying pan and cook until softened, about 5-10 minutes. If you haven’t blanched your bean sprouts, put them in a bowl, cover with boiling water, let sit for a few minutes, then drain. Combine the noodles, tofu, and bok choy with the sauce.
