Happy Vlogmas, guys! In Vlogmas Day 5, I’m taking y’all along for a cozy day in Alabama where the temperatures have been dropping super low—like 19° at night. We’re getting ready to ride through and see Christmas lights, and depending on how cold it is (and what my son wants to do), we may get out or we may just stay in the car and enjoy the view. It’s really just one of those simple, real-life holiday moments, and I love bringing y’all along for it. And because when it’s cold like this I always crave something warm and comforting, I’m also sharing my easy crock pot beef stew. I keep it simple: about a pound and a half of stew meat, one McCormick beef stew seasoning packet, onion, carrots, potatoes, and a can of diced tomatoes. I add about 2 1/2 to 3 cups of water, give it a good stir, and let it cook on high for about 4–5 hours. It’s the perfect dinner for a busy day—especially with some cornbread on the side.
