In this what I eat in a day, I’m keeping it healthy, high-protein, and actually realistic for a busy day. I start after my gym session (I did 40 minutes of walking while reading, then 20 minutes of running… and yes, I overdid it a little and got super dizzy). For breakfast, I make a simple fruit smoothie with frozen Trader Joe’s fruit, Greek yogurt, and chia seeds. I don’t add any sweetener because the fruit is already sweet enough, and if I had spinach I’d throw it in—but I was out, so I get my veggies later. Later, I have a quick mini snack: the last leftover blueberry pancake from the night before (food is food, don’t judge). For lunch, I make a warm, comforting tofu kimchi jjigae with two eggs, plus brown rice and blanched bok choy. It’s packed with flavor, super easy (about 25 minutes), and I love that kimchi has probiotic benefits—even though I definitely had to “get used to it” at first. For dessert, I bake a few Sweet Loren’s chocolate chunk cookies and have them with Lactaid 2% milk. I also share how I maintain my weight by listening to my body: I try to only eat when I’m hungry, avoid overeating, and keep things balanced instead of forcing myself to be “stuffed.”
