Today’s a work-from-home day, so I filmed a realistic “what I eat in a day” with my 80/20 approach: most of what I eat is nutritious (fruits, veggies, whole foods), and the rest is just real life—cravings, a little sugar, whatever. I start with an easy yogurt parfait because honestly, when I’m going into the office I usually don’t have time for breakfast. I keep it simple with Greek non-fat yogurt from Trader Joe’s, a little honey because I need it to taste good, and toppings like fruit and chia seeds (but not too much because… they start looking like bugs to me and it grosses me out). I even tried pomegranate seeds from Trader Joe’s for the first time, and they were so good. For lunch, I show what I do on a busy day with back-to-back meetings: I grab a Trader Joe’s salad that’s quick but still feels balanced. I’m also super intentional about hydration because I planned a run later—sometimes you’re not even hungry, you’re just dehydrated. I snack on juicy mandarins, then do toast with peanut butter and honey for something fast (and carbs before a workout). Dinner is my cozy fall meal: penne with vodka sauce and chicken sausage, using Goodles protein pasta (I accidentally bought the gluten-free one and it still tasted like regular pasta). It’s a one-pot situation because I’m not trying to wash a million dishes, and it’s the perfect warm, high-protein end to the day.
