In today's episode, I’ll take you along to pick pomegranates, enjoy a walk with my dachshund Arly, and cook a simple but flavourful cherry tomato pasta, chicken with peas, and a delicious autumn pomegranate cheesecake. Pomegranate Cheesecake Recipe: Cake base: - 200g dry biscuits; - 150 g butter; Cream Filling: - 500g cream cheese; - 50g sugar; - zest and lemon juice; - 50ml milk; - 6grgelatin; Topping: - 100 ml pomegranate juice; - 30g sugar; - 25g cornstarch; Instructions: Prepare the Base: Crumble the biscuits and mix them with melted butter until combined. Press the mixture firmly into a cake pan to form an even base. Refrigerate for 1 hour. Prepare the Cream Filling: In a large bowl, mix the cream cheese, sugar, lemon zest, and lemon juice until smooth. Meanwhile, hydrate the gelatin in cold water for 10 minutes. Heat the milk gently, then add the hydrated gelatin, stirring until dissolved. Combine the gelatin mixture with the cream cheese mixture, then pour this filling over the chilled biscuit base. Refrigerate for at least 3 hours. Prepare the Topping: In a small pan, combine the pomegranate juice, sugar, and cornstarch. Cook over medium heat, stirring constantly, until it thickens into a smooth, glossy sauce. Allow the topping to cool slightly, then pour it over the cheesecake before the cream filling sets completely.
