The cake recipe I’m sharing with you is called Amandina cake, a dessert that brings back sweet memories of my childhood. Amandina Cake Recipe: Ingredients Cocoa Sponge Cake: - 150 g flour - 150 g sugar - 25 g cocoa powder - 6 eggs (room temperature) - 4 tablespoons seeds oil - 2 packets vanilla sugar Ingredients for the Chocolate Cream: - 250 g soft butter (room temperature) - 250 g mascarpone - 400 g dark chocolate (50% - 65% cocoa) - 150 g sugar - 4 eggs (room temperature) - 1 tablespoon rum essence - a pinch of salt Ingredients for the Syrup: - 150 ml water - 50 g sugar - 1 tablespoon rum essence Ingredients for the Glaze: - 200 g dark chocolate ((50% - 65% cocoa) - 200 ml heavy cream (for whipped cream) Step 1: Cocoa Sponge Cake Beat the eggs, sugar, and vanilla sugar with a mixer for about 10 minutes until you get a thick, fluffy mixture. Gradually add the vegetable oil, mixing gently to incorporate. Then, slowly add the flour, followed by the cocoa powder, mixing carefully after each addition. Pour the batter into a greased and floured baking pan and bake in a preheated oven at 180°C (356°F) for 30-40 minutes. Step 2: Syrup Pour the sugar into a small saucepan and let it caramelize over low heat, stirring occasionally by gently moving the pan without mixing. Once the sugar has melted and turned golden, carefully add the water. Let it boil until the sugar is fully dissolved. Then, add the rum essence and mix. Allow the syrup to cool to room temperature before using. Step 3: Chocolate Cream Melt the chocolate using a double boiler and set it aside. Meanwhile, also using a double boiler, beat the eggs with the sugar for 10 minutes. Continue beating with a mixer until the mixture becomes thick and creamy. Gradually add the melted chocolate and mix well. Let the mixture cool to room temperature, then slowly incorporate the butter, mascarpone, and rum essence, mixing everything thoroughly until smooth. Step 4: Cake Assembly Slice the sponge cake into three layers. Soak the first layer with syrup, then spread a layer of cream. Repeat the process until the entire cake is assembled. Then, let the cake rest in the fridge for one hour. Step 5: Glaze Melt the chocolate in the warm cream, then let it cool slightly before pouring it over the cake.
