Begin by drizzling olive oil, sautéing red onion and red cabbage, and adding a touch of broth to let it stew. Simultaneously, in another pan, sauté spring onions and mix them with rice. Be mindful not to let the red cabbage dry out. Introduce wine to the rice and blend the stewed cabbage into a paste, seamlessly incorporating it with the rice mixture. For an enhanced flavour and creamier texture, add Parmesan and butter, then season with salt and pepper to taste.
