In today's episode, I will cook a typical Apulian dish: orecchiette with turnip tops and bake a delicious carrot cake with Philadelphia cream. I will also do some spring gardening by planting seedlings for my garden. Carrot Cake Recipe: For the cake: - 250g carrots (peeled and cleaned) - 3 eggs - 160g seed oil - 150g sugar (or 200g depending on taste) - 240g all-purpose flour - 1 packet (16g) of baking powder for cakes For the filling: - 500g cream cheese (Philadelphia) - 200g powdered sugar Instructions: To prepare the cake, peel the carrots, wash them, then cut them into pieces and chop them in a food processor. Add the seed oil to the chopped carrots. In a bowl, whisk the sugar and eggs until you get a fluffy mixture. Add the carrot cream mixture to the eggs and sugar, then stir well. Gradually add the flour and baking powder, mixing to form a smooth batter. Grease and flour a baking pan, then pour the batter into it. Bake at 180°C for 40 minutes. Check doneness with a toothpick. Once baked, let the cake cool. In the meantime, prepare the filling: in a bowl, mix the cream cheese and powdered sugar together until you get a smooth, creamy consistency. Once the cake has cooled, cut it in half and spread half of the cream on one side. Close the cake and spread the remaining cream on top. Decorate as desired.
