Slow Living in Italy: Baking Lasagna and Ricotta CheeseCake | Preparing for Spring Hello everyone! Welcome to my channel! For translations, please click on the CC button. In today's episode, I will share with you two simple Italian recipes: lasagna with ragù made with red wine and a delicious cake with ricotta cheese cream. Then, I will change up the home decor a little to prepare for spring. Ragù alla Bolognese 🍝 Ingredients: - 500g ground beef (or a mix of beef & pork) - 1 onion, 1 carrot, 1 celery stalk (finely chopped) - garlic (optional) - 750ml - 1L tomato sauce - 1/2 glass red wine - Olive oil - Salt & pepper to taste Heat olive oil in a large pan and sauté the onion, carrot, celery, and garlic (if using) until softened. Add the ground meat and cook until browned, breaking it apart with a spoon. Pour in the red wine and let it evaporate completely. Stir in the tomato sauce, salt, and pepper. Lower the heat and let the sauce simmer gently for 2 hours, stirring occasionally. Ricotta Cheese Cake Recipe Ingredients for the dough: - 180 g white flour - 75 g granulated sugar - a pinch of salt - 1 egg - 60 g butter - 2 teaspoons baking powder Ingredients for the filling: - 60 g corn starch - 150 g granulated sugar - 100 ml milk - 500 g ricotta cheese - 3 eggs - flavoring (lemon, vanilla, etc.) - 50 g raisins (optional) Mix the sifted flour, sugar, salt, egg, and diced butter in a bowl. Lastly, add the sifted baking powder. Quickly knead everything with your hands until you get a smooth and homogeneous dough. If the dough is too sticky, let it rest in the refrigerator for at least 30 minutes. Roll out the dough on the bottom and sides of a 24 cm diameter cake pan, greased and floured, forming a 4 cm high edge. Place it in the refrigerator until the filling is ready. For the filling, mix the ricotta cheese with the sugar and corn starch. Then, add the flavoring, eggs, and milk, mixing well until smooth. (Add raisins optional). Pour the cream into the pastry shell and bake for 70-80 minutes on the lower rack of a preheated oven at 180°C.
