In today's video, I'll show you how I make Pasta Norcina, a typical Umbrian dish. Then, I'll take you with me for some gardening, followed by some comfort baking: a simple custard cake and savory muffins with peas and bacon. Savory muffins with bacon and peas Recipe Ingredients: * 200 g of peas * 200 g of bacon * 200 g of all-purpose flour * 100 ml of whole milk * 3 eggs * 50 g of grated Parmesan cheese * 10 g of instant yeast for savory preparations * Salt to taste * Black pepper to taste * 30-50 ml of vegetable oil (depending on how much fat the bacon releases) In a non-stick pan, fry the bacon until it releases its fat. Add the peas and stir, allowing them to soften slightly. Turn off the heat and let the mixture cool.In a large bowl, beat the eggs with a whisk. Gradually pour in the milk while continuing to mix until you get a smooth and even mixture. Gradually sift in the flour and instant yeast, stirring constantly to avoid lumps. Pour in the bacon and peas mixture, along with the grated Parmesan. Season with salt and pepper to taste.Pour in the vegetable oil to create a creamy and smooth batter. Mix well until everything is fully combined.Pour the mixture into muffin molds (or a loaf pan if you prefer). Bake in a preheated static oven at 180°C (350°F) for about 30-40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean. Custard Cake Recipe (for a 20-22 cm cake pan) Ingredients for the base: * 300 g flour * 200 g sugar * 130 ml vegetable oil * 100 ml milk * 3 eggs * 1 packet of baking powder Ingredients for the custard: * 250 ml milk * 100 ml fresh liquid cream * 70 g sugar * 20 g cornstarch * 3 egg yolks * 1 vanilla bean/essence Ingredients for glazing: * 50 g sugar * 100 ml water First, prepare the custard by separating the yolks from the egg whites. In a bowl, whisk the yolks with the sugar and cornstarch until you get a smooth and homogeneous mixture. In a saucepan, heat the milk with the vanilla bean/extract (or lemon zest). Then, slowly pour the hot milk into the egg mixture, stirring continuously. Transfer the mixture back to the stove and cook over low heat, stirring constantly, until the custard thickens. Pour the custard into a bowl and cover it with plastic wrap to prevent a skin from forming. Let it cool completely. Prepare the cake: Beat the eggs with the sugar until the mixture becomes light and fluffy. Gradually add the oil while continuing to beat, then slowly incorporate the milk. Sift in the flour little by little, and finally, add the baking powder. Mix until you get a smooth batter. Pour the mixture into a well-greased cake pan. Spoon the cooled custard into the center of the cake batter. Bake in a preheated static oven at 180°C (350°F) for about 40 minutes. To glaze the cake: Let the cake cool completely before removing it from the pan. In a saucepan, heat the sugar with water until it forms a slightly thick syrup.
