Press the mixture evenly into a 24 cm cake tin and place it in the fridge for 30 minutes to set. *Filling: In a bowl, whisk 1 whole egg and 1 egg yolk with 70g of sugar. Gradually add 500g of cream cheese, mixing until smooth. Then incorporate 25g of potato starch, 2 teaspoons of your preferred flavoring essence, and finally 100g of fresh cream. Mix well until fully combined. Pour the filling over the chilled base and bake in a preheated oven at 170°C (340°F) for about 50 minutes, or until the center is set and the top is lightly golden. * Salted Caramel: In one saucepan, melt 200 g of sugar over low heat. In a separate pan, gently warm 130 g of fresh cream. Once the sugar turns a deep amber color, remove it from the heat and carefully pour in the warm cream, stirring quickly to combine. Add ½ teaspoon of sea salt flakes, then stir in 100 g of butter until fully melted and the sauce is smooth. Once the cake and the caramel have cooled, pour the caramel sauce over the cake and decorate with peanuts.
