Please share photos of your biscuits and gravy on Country Legacy's Facebook Page: https://www.facebook.com/profile.php?id=61571919446434 Flaky Buttermilk Biscuit Recipe 4 ½ cups all-purpose flour, plus more for dusting the surface 1 tablespoon + 1 teaspoon baking powder 1 teaspoon of baking soda 2 teaspoons granulated sugar 1 teaspoon of salt 1 cup COLD unsalted butter 2 cups of buttermilk (2T of lemon juice or vinegar added to two cups of milk will also give you buttermilk, I recommend whole milk) Preheat the oven to 425°F. Set out an ungreased baking sheet. In a large bowl whisk together the flour, baking powder, baking soda, sugar, and salt. Cut in the COLD butter using a pastry cutter, knives, or your hands. You’ll know it’s ready when coarse crumbs have formed. Gently stir in the buttermilk with a spoon. Stir until incorporated. You will have a wet, shaggy dough. Generously flour a clean work surface and keep your flour nearby to dust your hands and the dough regularly. Turn the dough out onto your prepared surface, flour your hands, and knead it a few times. It will get easier to work with. Pat it out into a rectangular shape about an inch thick. Fold the short sides toward the middle. This is what gives your finished biscuits their “layered” texture. Smack the folded dough down and press it back out into the rectangular shape. Repeat this process seven times, but skip the folding on the seventh time and get ready to cut out your biscuits. Cut your biscuits out into 2 - 2.5" circles. If your size varies the bake time may change. Space the biscuits an inch or two apart on your prepared baking sheet. Bake for 20 minutes. Optional: brush the tops with melted butter as soon as the biscuits come out of the oven. Hamburger Gravy 1 pound ground beef ¼ cup all-purpose flour 2 T. Butter 3 cups of milk salt and pepper to taste ( You could start with ½ teaspoon and adjust to preference) 1 T. Onion Flakes (I use a lot more than this but you will want to start with less and adjust to preference) Cook ground beef in a large skillet over medium-high heat until evenly browned and crumbled, 7 to 8 minutes. Lower heat add butter, melt, then sprinkle flour and spices over top; stir until beef is evenly coated and all fat is absorbed. Return the skillet to the stove over medium heat. Stir in 1 cup milk; cook and stir until smooth, 3 to 5 minutes. Add the remaining 2 cups milk; cook and stir until the desired consistency has been reached and the gravy comes to a boil, about 5 minutes.
