If you give it a try, please comment on this page or on our Country Legacy's Facebook Page: https://www.facebook.com/profile.php?id=61571919446434 Moist Carrot Pineapple Cake Recipe Link: https://docs.google.com/document/d/1CxsWqKXCL3XwKV0g4Dt_-IL-5E3yg62mAtGbUJlCsmw/edit?usp=sharing Moist Carrot Pineapple Cake Recipe 3 large eggs, room temperature 2 cups granulated sugar ¾ Cup vegetable oil ¾ Cup Buttermilk (¾ T. vinegar added to milk will equal buttermilk) 2 teaspoons vanilla 2 cups all-purpose flour (spooned & leveled) 2 teaspoons baking soda 2 teaspoons ground cinnamon1 teaspoon salt 1 (8-ounce) can crushed pineapple, drained 2 cups grated carrots, lightly packed 1 cup chopped walnuts (optional) 1 cup raisins (optional) 1 cup flaked coconut (optional) For the cream cheese frosting: 1 (8-ounce) package of brick-style cream cheese, softened to room temperature 1/2 cup butter, softened to room temperature 1 teaspoon vanilla extract 1 box (16 ounces) powdered sugar 1 teaspoon pure vanilla extract Instructions To make the carrot cake: Preheat oven to 350°F. Spray a 9x13-inch baking pan with non-stick cooking spray and set aside. In a large mixing bowl, whisk the flour, baking soda, cinnamon, and salt until well combined. Set aside. In a separate large mixing bowl, whisk the oil, eggs, granulated sugar, and vanilla extract until fully combined. Add the grated carrots, crushed pineapple, coconut, raisins, and chopped walnuts to the wet ingredients and stir until well combined. Add the dry ingredients to the wet ingredients and mix with a whisk or rubber spatula until just combined, making sure not to overmix the batter. Pour the cake batter into the prepared baking pan and spread around into one even layer. Bake at 350°F for 50-55 minutes or until the top of the cake is set and a toothpick inserted into the center of the cake comes out clean. Remove from the oven, transfer to a wire rack, and allow to cool completely in the pan.
