Whether you’re baking for your family or want a special dessert for Sunday dinner, this recipe is simple, satisfying, and made with love. 🌿 Link to recipe: https://www.lifeloveandsugar.com/strawberry-shortcake-cake/? 🧁 Cake Ingredients 2 ½ cups (325g) all-purpose flour 2 ½ tsp baking powder ½ tsp salt ½ cup (112g) unsalted butter, room temp ½ cup (120ml) vegetable oil 1 ½ cups (310g) sugar 1 tbsp vanilla extract ( I used almond extract) 4 large eggs 1 ¼ cups (300ml) milk 🍓 Strawberries 1 pound fresh strawberries 3 tbsp (39g) sugar 🍦 Whipped Cream 2 ½ cups (600ml) heavy whipping cream 1 ¼ cups (144g) powdered sugar 2 tsp vanilla extract (I used almond extract) 🔪 Step-by-Step Instructions 1. Prepare and Bake the Cakes: Preheat your oven to 350°F (176°C). Grease three 9” cake pans and line the bottoms with parchment. In a medium bowl, whisk flour, baking powder, and salt. Set aside. In a large bowl, cream together the butter, oil, sugar, and vanilla until light and fluffy (about 2 minutes). Add eggs one at a time, mixing well. Alternately adding dry ingredients and milk, beginning and ending with dry. Mix until smooth, but don’t overmix. Divide the batter evenly into pans and bake 18–20 minutes. Cool completely. 2. Prep the Strawberries: Slice strawberries and combine with sugar. Chill in the fridge for 1–2 hours to let them release their juices. 3. Make the Whipped Cream: Beat cold whipping cream with powdered sugar and vanilla until medium-stiff peaks form. 4. Assemble the Cake: Place the first cake layer on a plate, spread or pipe whipped cream, then add half the strawberries. Repeat with the second layer.
