Drop a comment here or come say hi over on our Country Legacy Facebook page: https://www.facebook.com/profile.php?id=61571919446434 Link to the recipe: https://docs.google.com/document/d/1_kmrcEDsYtI4xnywwDlXRr0BZTYVzRAvGzzlktuMnPE/edit?usp=sharing 🥗 Malinda’s Potato Salad Recipe Ingredients: 7 medium potatoes (about 3 lbs), peeled if desired 3 tablespoons white vinegar 1 teaspoon salt 1 teaspoon black pepper ¼ teaspoon garlic powder 1 cup mayonnaise 2 tablespoons prepared mustard 2 tablespoons sugar (or 1 ¼ tablespoons honey) 6–8 hard-boiled eggs, peeled and diced 2 stalks celery, diced ½ cup dill pickles, chopped (or dill relish) ½ cup red onion (or sweet onion), diced 1 teaspoon dried dill (or more if using fresh) Paprika, for garnish Instructions: Cook the Potatoes – Cut potatoes into ½–¾ inch chunks. Place in a pot with 2 tsp salt and enough water to cover by 1 inch. Boil until fork-tender, 8–10 minutes. Drain and sprinkle vinegar over potatoes. Stir and let cool 15 minutes. Prep the Mix-Ins – Dice eggs, pickles, celery, and onion. Chop dill if using fresh. Place in a bowl. Make the Dressing – In a small bowl, mix mayonnaise, mustard, sugar (or honey), garlic powder, salt, pepper, and dill. Combine – Add cooled potatoes to the dressing mixture. Fold gently until well coated. Taste and adjust seasoning. Chill & Serve – Refrigerate for at least 1 hour (or up to 1 day).
