In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan. In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs, and oil until smooth. Pour batter into the prepared pan. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean. Yield: 1 9x13 pan or 12" cast iron skillet. Chili Recipe 1# Hamburger ½ Cup Green Peppers (Diced) ½ Cup Onion (Diced) Jalapeno’s (Optional) Garlic (optional) 16 oz can Dark Red Kidney Beans 1 Quart Diced Tomatoes 2 T. Chili Seasoning Spice (Recipe below) or 1 pack of store-bought seasoning mix. Salt and pepper (added after the chili is complete, added for desired flavor) Brown hamburger (drain if needed). Put in peppers and onions, fry until onions are translucent, then add garlic (optional). Add spice, and brown for one minute. Add tomatoes, and kidney beans, and simmer until warm and longer for a better flavor. Adjust flavor to your preference by adding more salt, pepper, or other spices. Store in the refrigerator for up to 5 days, or in the freezer for up to 6 months. Chili Spice Mix (Makes approx. 1 pint container full, you can cut this recipe in half or more) 2 Tablespoons of seasoning mix = one pack of chili seasoning. 9 T. Chili Powder 6 T. Cumin 2 T. Paprika 2 T. Oregano 1 T. Garlic Powder 1 T. Onion Powder 2 T. Salt 2 T. Pepper ¾ t. Cayenne Mix together, put in an airtight container.
