Heat it over medium heat, stirring often, until it reaches 180 degrees. Cool the milk- Remove the pot from the heat and let it cool to about 115 degrees. Let the milk sit in the pot until it cools down, about an hour. Or to speed up the process, put your pan in an ice bath to cool down quickly. Keep an eye on the thermometer because it cools quickly in an ice bath. Preparing your culture- Use 2 tablespoons of live-culture yogurt for every quart of milk. (make sure that the yogurt culture does not have any flavorings or colors, and be sure that the yogurt contains live cultures) Mix the yogurt into the milk, and whisk until smooth. Pour the Yogurt mixture into jars- using a canning funnel or pour directly into a quart-size jar. Prepare your Cooler- (I used a smaller cooler so I didn’t have to fill as many hot water jars.) Pour hot water into enough quart jars to put on both sides of your yogurt-filled jars. Be sure to temper the jars by pouring some hot water under the jars. Incubate- Place jars into cooler with hot water jars touching and surrounding the yogurt-filled jars. You can cover the cooler to help it retain the warm temperature.
