This is a straight-shooting, repeatable recipe with a shatter-crisp crust and a jalapeño tartar sauce that actually belongs on fish. Works best with walleye, but any firm white fish (perch, bluegill, crappie, cod) is fair game. Recipe Fish Fry walleye (or other white fish) in Catch and Cook Spicy breading and set aside. Jalapeño Tartar Sauce 1 cup mayo 1/3 Cup Sweet Relish 1/2 cup finely chopped jalapeños (seeded for milder heat) 1 Tbs lemon juice Mix, taste, adjust. Let it sit 10–15 minutes to meld.
