Apple Cider Vinegar Pickled Beets Fresh beets (cooked, peeled, and sliced) For the Brine: 1 cup water 1 cup apple cider vinegar ½ cup honey (or sugar if preferred) 1 small red onion, diced (or freeze-dried equivalent) 4 cloves garlic, minced (or freeze-dried equivalent) 1 teaspoon mustard seed 2 bay leaves 2-3 whole cloves 1½ teaspoons peppercorns (mixed colors for visual appeal) 1 teaspoon dried thyme 1 teaspoon dried oregano To make the brine: combine all ingredients in a saucepan and bring to a boil.
