This meal was almost too fancy for me... ;) I really enjoyed the Chimichurri sauce it was amazing with the coffee rub on the Tri Tip steak. I love the reverse sear method and it also is very simple to do to, hopefully, get the steak temperature you want. I put the steak on the big green egg to BBQ, or cook indirectly, at 225 degrees until the internal temperature on the Tri Tip was 125 degrees. Once there I removed the steak and set the BBQ up for direct high heat searing. Once up to a high heat of about 500-600 degrees I seared the steak, making sure to get all sides.
