Today we grilled up two amazing T-Bone steaks on the Big Green Egg. the technique I use to make sure the filet portion of the steak is not overcooked is to position the T-Bone on the edge of the coals in the grill which gives me a great sear and ensures the entire steak comes out perfect. to put it differently, if I had a propane grill it would be on in between a lit and unlit burner with the filet, smaller portion, on closer to the unlit burner.
