I love Tri tip. Let me say that again, I love the smokey goodness of BBQ Tri Tip cooked over an open flame with red oak. The reverse sear method is a great alternative to make some great tasting Santa Maria BBQ. The trick is get start off with your BBQ and/or Pellet grill at a very low temperature. For this cook I had the BBQ set to 225. Once the internal temperature on the steak was at 115ish I pulled the steak off and set the grill up to sear the Tri Tip at the hottest temperature I could get it at. Once the temperature of the BBQ was at around 400 degrees I seared the tri tip on all sides making sure to rotate the steak. I was able to get some amazing bark formation from the Asmoke. I was very impressed with this little pellet cooker. Once all sides are seared I removed the steak from the grill and let it rest for about 10 minutes. --------------------------------------------- Want to directly support our channel?
