This is the ultimate steak cooking experience. This is the best and easiest way to ensure you are never over cooking your steaks. The reverse sear method has you bring the steak up to the desired temperature slowly with low indirect heat. Since we have the big green egg, I set the BBQ up for indirect heat using the deflector plate. I used post oak wood chunks and lump charcoal for this cook.
