I set the Big Green Egg for indirect cooking (BBQ) at 350 degrees. Once I got the fire going, I put the deflector plate and grate on the BBQ. For the bone marrow I drizzled olive oil and sprinkled the top with salt. We cooked the bone marrow for 20 minutes until it was spongy to the touch. Then we sliced up fresh home made sourdough bread. After it was done cooking we took the marrow out of the bone with a knife and tongs. We mixed all the marrow together with more olive oil and salt. The last thing to do is spread the marrow on a warm toasted slice of bread. This is certainly an acquired taste. I like the idea of healthy bone marrow but not the execution of it.
