Cleaning out your BBQ is a very important part of BBQ ownership and I believe this is often overlooked. What you have in time is a dirty and unclean environment where you are trying to cook food you are going to eat. The dirtier it is the harder it is clean cook and maintain your desired temperature. Eat clean and maintain a safe place for your food ;). I will accomplish a true hot burn to fully clean out my BBQ about every 3-4 months. This could not be any easier...trust me. After a cook I usually add a lot of charcoal. This time I had some extra old wood chucks and logs I wanted to use up so I used those instead. Set the bottom damper to fully open and remove your flywheel at the top and let the BBQ do it's thing.
