In this short video, I revisited the most common buttercream issues that can mess up your decorating plans—especially if you’re a new or small cake business owner. I started from the real “root” of many problems: consistency. When your buttercream is too hard, too dry, too watery, or too light, you’ll struggle with covering, piping, and even long-term issues like cracks or rosettes falling off. I shared my simple approach (my “2-2-500” style with a little liquid) and reminded you to be careful with how much milk or water you add so you don’t end up with a loose, unusable frosting. Then I broke down quick fixes for specks/dots in buttercream (especially when coloring), bitter-tasting buttercream (common with black, red, royal blue), gritty/grainy buttercream, and rough finishing. For color specks, I mix color into a small batch first before combining with the main batch. For bitterness, I let colors deepen overnight (oxidation), switch to better-quality colors, try blooming (for SMBC), or use a white base coat and apply only a thin colored coat. For graininess, I always sift my icing sugar—save, save, save—then mix properly. Finally, for rough finishing, I emphasized the right tools, correct scraper pressure/positioning, and consistent practice—because this is why you must charge right: cake decorating is work.
