What works for someone else might not work for your oven, your pans, or your environment, so you need to know the temperature your cakes bake well with. Then there’s ingredient inconsistency: changing flour, flavors, and “latest” ingredients every week will definitely change your outcome. I use the same vanilla flavor and the same type of flour every single time, and that’s how I get consistent results—if not 100%, at least 99.99%. Finally, your mixing matters: overmixing or undermixing will give you different textures and different cakes. Fix these four areas and your results will stop surprising you.
