In this video, I opened up about something that was honestly difficult for me: I changed my cake recipes after using them for over 10 years. I shared the real, “untold” reasons behind that decision—especially for my vanilla cake. At some point, my vanilla cake started misbehaving in a way I couldn’t explain: it was shrinking by the sides, almost like a compressed loaf of bread. I troubleshot, checked my process, and when I couldn’t find a solid answer, I knew I needed a new solution—so I changed that recipe first. I also changed my recipes because I moved from Nigeria to the UK, and I needed to adapt to a new environment, new ingredients, and a new audience that cares about taste, texture, and overall experience. Learning excites me—it’s part of my happy place—so I leaned into classes and practice, especially during a season when I needed a mental refresh. I also needed a mentor and a guide in my new market, and that support helped me understand how things work here. Finally, I wanted a full brand facelift: baking, packaging, presentation, branding—everything. And no, I don’t regret it. My old recipes weren’t “bad”; it was simply time for growth and an overhaul that matched where I was going next.
