Roasted red pepper hummus: 3 cups chickpeas 1 cup aquafaba (start with about 1/2 - 3/4 cup first and add more as needed to get a smooth consistency) 2-3 TBL tahini 3-4 pieces roasted red pepper (equivalent to about 1/2 a pepper) or more, if desired Juice from 1/2 lemon 1-2 cloves garlic or sub 1 tsp. garlic powder Optional: 1-2 TBL Frank's red hot sauce (or sub with 3-4 jalapeños) 1/2 tsp. salt Blend on high until smooth and creamy, about 45-60 seconds. Taste and adjust seasonings if needed. Baked brie: https://itdoesnttastelikechicken.com/vegan-baked-brie-dip/ Mine got very thick in the oven, so next time I would probably cook this on the stovetop, especially if I plan to transfer it to a serving dish after! Or alternatively, I would use a more presentable serving dish for baking and reduce the time to 20 minutes, stirring once after 10 minutes. Quinoa stuffed squash: 3 cups cooked quinoa 1 cup dried cranberries 1 cup chickpeas 1/4 red onion, chopped 1/3 cup mint & parsley, roughly chopped or hand torn Dressing: Juice of 1 orange 1-2 cloves garlic 2-3 TBL red wine vinegar 1-2 TBL maple syrup 1/3 cup aquafaba (or use veggie broth or olive oil) Salt & pepper to taste Add to baked acorn squash and heat for 15-20 mins., if desired. Optional: add vegan feta on top.
