(Just cover the veggies with enough broth to boil and that will be enough broth) Rutabaga & carrot muffins (makes 12 muffins) 1½ cups flour ½ cup brown sugar (or coconut sugar) 1 tsp baking powder ½ tsp baking soda 1½ tsp cinnamon ½ tsp ginger ¼ tsp nutmeg 1-2 tsp orange zest (optional) Pinch salt 1 cup plant milk ⅓ cup neutral oil or melted coconut oil 1 tsp vanilla 1 tbsp apple cider vinegar (or lemon juice) 1½ cups grated rutabaga (or grated carrot, or 50/50 of both) Optional: add ¼ cup chopped walnuts or raisins (or both!) Preheat oven to 350F. Grate rutabaga & carrot, then wring out excess liquid with a clean tea towel. Mix dry ingredients well, followed by wet ingredients. Combine the wet and dry first, then add grated rutabaga and walnuts/raisins (if using).
