I head out after Chinese Water Deer, test some new kit and finish the day with a proper flavour bomb… a Chinese style crispy chilli venison dish that you need to try. We start with a morning of CWD stalking, learning more about their behaviour, their habitats and what makes them such an interesting little deer to hunt. After that it’s new gun day. I pick up a new .22 rifle, a .17HMR and a beautiful Rizzini shotgun that I cannot wait to put through its paces. Back at home, it’s time to take the CWD from field to table. The recipe is a Chinese inspired crispy chilli venison. Sticky, spicy, crisp on the outside and tender inside. If you like proper field to fork cooking, you’ll enjoy this one.
