Prepare the Dough • In a large mixing bowl, whisk together the all-purpose flour, matcha powder, granulated sugar, and salt until evenly combined. • Sprinkle the instant dry yeast over the top and whisk it in. • Pour the warm water and oil into the bowl. Use a spatula or wooden spoon to mix everything until a shaggy, sticky dough forms. Make sure there are no dry patches of flour remaining. 2. First Rise (Bulk Fermentation) • Cover the bowl with plastic wrap or a clean kitchen towel. • Let the dough rise in a warm, draft-free spot for 1.5 to 2 hours, or until it has doubled in size. 3. Shape the Loaf • Lightly flour a clean work surface. Gently scrape the dough out of the bowl and onto the surface. • Gently fold the dough over on itself a few times to form a rough ball. Avoid kneading it too much to keep the air bubbles intact. • Pull the edges of the dough toward the center to create a taut surface, forming a round loaf (boule). • Place a large piece of parchment paper on your work surface and set the shaped dough, seam-side down, in the center of it. 4. Second Rise (Proofing) • Lightly dust the top of the loaf with flour. Cover it loosely with plastic wrap or a kitchen towel. • Let the dough rest for another 30-45 minutes. The bread will look pale but will have risen significantly. • Continue baking, uncovered, for another 10-15 minutes, or until the crust is golden brown and firm. 6. Cool and Serve • Carefully remove the Dutch oven from the oven. Use the parchment paper to lift the bread out and place it on a wire cooling rack. • Allow the bread to cool completely for at least 1 hour before slicing.
