Mix the Dough In a large bowl, combine the flour, yeast, salt, and sugar. Add the warm water. Stir with a wooden spoon or spatula until a sticky dough forms and no dry flour remains. 2. Knead Briefly Turn the dough onto a lightly floured surface. Knead for 5 to 7 minutes, until the dough becomes smoother and slightly elastic. It should still feel soft. If you prefer, you can knead in the bowl using stretch-and-fold motions for about 2 minutes. 3. First Rise Lightly oil a clean bowl. Place the dough inside and turn it once so the top is lightly coated. Cover with plastic wrap or a clean towel. Let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size. 4. Prepare the Dutch Oven Brush the Bread oven with olive oil. 5. Shape the Dough Gently transfer the risen dough onto the cast iron bread oven. Using lightly oiled hands, press and stretch the dough into a round or oval shape that fits the base of your Dutch oven. Focaccia does not need to be perfect. Keep the dough about 1 inch thick. Cover loosely and let it rest for 30 to 45 minutes, until puffy. 6. Preheat the Oven Place your oven rack in the center. Preheat the oven to 425ยฐF (220ยฐC). You do not need to preheat the Dutch oven for this recipe. Baking focaccia in a room-temperature Dutch oven helps prevent the bottom from overbrowning while the dough finishes rising. 7. Add the Toppings Drizzle the top of the dough with 2 to 3 tablespoons olive oil. Use your fingertips to press deep dimples all over the surface. Sprinkle with flaky sea salt and chopped fresh herbs. If using garlic, scatter it lightly over the top. 8. Bake Carefully place the Dutch oven if it is not already there. Cover with the lid and bake for 20 minutes. Remove the lid and continue baking for 10 minutes, until the top is golden brown and the edges look crisp. If you want a deeper golden top, bake uncovered for another 2 to 3 minutes, watching closely. 9. Cool Lift the focaccia out and place it on a wire rack. Let it cool for at least 15 to 20 minutes before slicing.
