This wild-growing plant is colorful, tender and unexpectedly sweet to the taste. In addition to its desirable flavor, it’s also incredibly beneficial for your liver, pancreas, kidneys, gallbladder, stomach and intestinal tract. Heat up cast-iron frying pan on stove top. Add in rendered pork fat, chopped onion, garlic, black pepper and salt. Fry mixture for 3-5 minutes or until golden brown. Chop Linguisa sausage into small cubes, add it to the pan and stir thoroughly. Throw in chopped salsify and keep stirring for another 2-3 more minutes. Make sure to taste your creation and adjust flavors as needed. While the combination simmers, combine eggs and half and half in a bowl and whisk. Add whisked content to frying pan and mix again. Transfer cast-iron from stove into the oven and bake for 15-20 minutes at 350°F. Once the frittata sets up, add shredded cheddar on top and broil on high for an additional 2-3 minutes (or until slightly crispy). Remove the pan from the oven and let the frittata cool for 5-ish minutes. Last but not least, slice, garnish and enjoy!
