Season well. Sear in a smoking-hot cast iron skillet with avocado oil (2–3 min per side). Lower heat, add butter, garlic, herbs, and baste. Cook to 125°F (rare) or 135°F (medium-rare). Rest 5–7 minutes. Mushroom Cream Sauce Sauté mushrooms in butter until golden. Add garlic, deglaze with wine, reduce, then add cream and simmer until thick. Twice-Baked Potato Bake potatoes at 400°F for 50–60 min. Scoop, mash with butter, sour cream, cheese, bacon, season, stuff, and rebake until golden. Honey Glazed Carrots Sauté carrots in butter until tender.
