Ingredients Sun-Dried Tomato Rice Pilaf * 1 cup white rice * 2 cups chicken stock * 1 small shallot, finely diced * 1 rib celery, finely diced * 1 small carrot, finely diced * 2 garlic cloves, minced * 1/4 cup sun-dried tomatoes, chopped * 1 tbsp avocado oil * 1 tbsp unsalted butter * Tru3nola Cajun Seasoning, to taste * Salt and black pepper, to taste Cajun Salmon & Tiger Prawns * 2 salmon fillets, skin-on * 4 colossal tiger prawns, peeled and deveined * Tru3nola Cajun Seasoning * Old Bay seasoning * Tony Chachere’s Creole Seasoning * Lemon pepper * Paprika * Salt and black pepper * 2 tbsp avocado oil * 2 tbsp butter, divided * Zest of 1 lemon * Juice of 1/2 lemon Lemon Garlic Cream Sauce * 1 tbsp butter * 2 garlic cloves, minced * Juice of 1/2 lemon * 1/4 cup chicken stock * 1 tsp Worcestershire sauce * 1/4 cup heavy cream * 1 cup fresh baby spinach * Salt and pepper, to taste Cooking Instructions Step 1: Build the Rice Pilaf Heat avocado oil and butter in a saucepan over medium heat. Add shallots, celery, and carrots, then sauté until softened and aromatic. Stir in garlic and sun-dried tomatoes and cook for 30–60 seconds. Season with salt, pepper, and Tru3nola Cajun Seasoning. Add rice and stir to coat. Pour in chicken stock, bring to a boil, cover, and reduce to low. Cook undisturbed for 20 minutes. Fluff with a fork and set aside. Step 2: Sear the Cajun Salmon Season salmon with salt, pepper, lemon pepper, and Tru3nola Cajun Seasoning. Heat avocado oil and butter in a skillet over medium-high heat. Place salmon skin-side down and gently press to crisp the skin. Flip and cook until just done. Remove and rest. Step 3: Sauté the Tiger Prawns Season prawns with Old Bay, Tony Chachere’s, lemon pepper, and paprika. Add butter to the skillet and cook prawns 1–2 minutes per side until pink and opaque, basting with butter as they cook. Remove and set aside. Step 4: Make the Lemon Garlic Cream Sauce In the same skillet, melt butter and add garlic, stirring quickly to avoid browning. Add lemon juice, chicken stock, and Worcestershire sauce. Simmer briefly, then stir in heavy cream. Add spinach and cook until wilted. Season to taste. Step 5: Plate and Serve Spoon the sun-dried tomato rice pilaf onto the plate, add the Cajun salmon, top with tiger prawns, and finish with the lemon garlic cream sauce.
