Add the ham bone or hock for a rich flavor. Pour in chicken stock or broth until the ingredients are well-covered. Adjust the liquid level as needed during cooking. Season with hot sauce, Worcestershire sauce, Cajun seasoning, salt, and black pepper. Start with a moderate amount and adjust later according to taste. Bring the mixture to a boil, then reduce heat to simmer. Cover and let it cook for about 2-3 hours or until the beans are tender, stirring occasionally.
