Render the Bacon: In a large pot, cook bacon over medium heat until crispy. Remove the bacon and leave about 1–2 tbsp of bacon fat in the pot. 2. Brown the Chicken: Add chicken pieces to the pot and cook until browned. Remove and set aside. 3. Sauté the Vegetables: In the same pot, add shallot, celery, and grated carrot. Cook until softened, then stir in garlic until fragrant. 4. Season and Deglaze: Add Cajun seasoning, salt, pepper, smoked paprika, and garlic powder. Stir to coat, then pour in the Sherry wine and scrape the bottom of the pot. 5. Add Corn and Stock: Add the corn kernels and stir, then pour in the chicken stock. Bring to a boil, then add the diced potatoes. 6. Simmer and Finish: Once the potatoes are halfway cooked, add the sazon seasoning, reduce the heat to medium, and pour in the heavy cream. 7. Thicken the Chowder: Stir in the cornstarch slurry until the chowder reaches your desired thickness. 8. Add Cheese and Serve: Lower the heat, add 1/3 cup of cheddar cheese, and stir until melted. Ladle into bowls and garnish with remaining cheese, crispy bacon, and green onions.
