Ingredients For the Bolognese Sauce: • 1 large shallot, finely diced • 2 celery stalks, finely diced • 1/3 cup shredded carrots • 4–6 cloves garlic, finely diced • 1 lb ground beef 85/15 • 1/2 lb ground pork • Salt and pepper, to taste • 1 tbsp Italian seasoning • 1 tsp dried oregano • 1 tbsp tomato paste • 1/2 cup white wine • 1 jar marinara sauce • 1/2 cup chicken broth or stock • 1 tsp sugar • Pinch of cayenne pepper • Fresh parsley, chopped For the Pasta: • Spaghetti noodles • Salt • Olive oil For Garnish: • Freshly grated Parmesan cheese • Additional chopped parsley Instructions: 1. Brown the ground beef and pork over medium heat with a little oil. Season with salt, pepper, Italian seasoning, and oregano. 2. Add the shallot, celery, carrots, and garlic. Cook until softened and fragrant. 3. Stir in the tomato paste and cook for 1 minute. 4. Deglaze with white wine, then add marinara sauce and chicken broth. 5. Add sugar and cayenne pepper. Simmer on low until rich and flavorful. 6. Cook the spaghetti in salted boiling water until al dente. 7. Add the pasta to the sauce and toss to coat. Stir in fresh parsley. 8.
