UBE Cookie Version 2 (VEGETARIAN/ALMOST VEGAN)

Ube Cookie V2 **** My second attempt at chewy ube cookie. I wanted a more pronounced ube flavor. I found a finely ground powdered ube to up the ube flavor stakes. This recipe is almost all vegan, save for the chocolate chips and the C&H sugar (Google it).
