Ingredients - 4 chicken thighs (boneless, skin-on or skinless) 3 Slices of Bacon, cooked Seasoning blend of your choice 4 slices of cheese Bread of your choice (I used 3 slices of white) Sliced tomatoes Sandwich sauce: - 2 tbsp. of mayonnaise - 1 tbsp. of olive oil - The juice of half a lemon - Mix these 3 ingredients together until well combined Recipe - 1. Set your sous vide circulator to 145 degrees Fahrenheit. 2. Season your chicken thighs with your desired amount of seasoning, on both sides. Place your thighs in a large zip-top style freezer bag. Place the bagged thighs into your sous vide bath for 45 minutes. 3. After 45 minutes, remove the thighs from the water bath, place onto a wire rack over an oven pan lined with paper towels, and dab the thighs until dried on both sides. Set aside. 4. Get your smoker to about 250 degrees Fahrenheit. Take your chicken thighs and place them into the smoker, allowing to gently smoke for 1 hour. 5. While the chicken smokes, cook your bacon slices and toast your bread. For added flavor, toast your bread in the bacon fat. 6. After 1 hour, top the thighs with cheese slices and allow to smoke for 5 more minutes, to allow the cheese to melt. Remove after 5 minutes. 7. Spread sandwich sauce on one slice of bread, then top with tomatoes and chicken. Cover with another slice of bread, spread more sauce, top with another thigh, top the thigh with your bacon slices, and then top with another slice of bread. 8. Cut into equal halves for easier eating.
