Hi my friend—this was one of my real-time “time crunch” dinner lives where I’m making an easy, quick meal for my family of five on a super busy Tuesday (boy scouts, jiu-jitsu, piano… all the things). I made Smithfield pork tenderloin from Walmart (I grabbed two because my prayer is always that it can be a two-night meal), plus creamed potatoes and freezer veggies. I walked you through how I get it in the oven fast, how I season it with my go-to seasonings, and how I plan dinner around what we already have at home. I also talked through the working-mom reality of coming home to a kitchen that’s not how I left it—because the kids beat me home, everybody’s snacking, and “clean” looks different for everybody. So I showed you what I actually do: I clean as I go, clear the counters first, load and start the dishwasher before dinner is done, and wipe everything down while the food cooks. I also shared how I’m working to get our grocery budget down (we were spending around $2,000) and how shopping my fridge/pantry and being intentional is helping me push toward that $1,500 goal—without feeling like we have to live on beans and rice every night.
