After I saw him visit several clay pot rice restaurants in Hong Kong, Singapore, and New York I wanted to try to make something similar at home. I don't have the proper clay pot to use so my rice won't develop the amazing crust of traditional clay pot rice, however, it tastes delicious and it's very easy to make. One day I will travel to Hong Kong and try one of the clay pot restaurants recommended on Strictly Dumpling. Here's the Sweet Savant recipe for pressure cooker rice with Chinese sausage inspired by clay pot rice 3 cups of long grain white rice 3 and 1/4 cups of water 4 Chinese sausages sliced into 1/2 inch pieces FOR THE DRESSING 1 tablespoon of brown sugar 1/4 cup low sodium soy sauce 1-2 tablespoons of toasted sesame oil 1 tablespoon red wine vinegar serve with chili crisp if you like Cook the rice, sausage, and water on high pressure for 3 minutes then natural release for at least 10 minutes.
