These are the absolute CRISPIEST Air Fryer potatoes EVER! I'm making these in 3 different air fryers; the Ninja Foodi PRO XL Grill, the CruxGG 9 quart TRIZONE air fryer, and the Nuwave Bravo Air fryer/toaster oven. This is a 2 step process I learned from the Serious Eats website. Adding baking soda to the water makes the water more alkaline. The alkalinity makes the surface of the potato break down so you get more surface area to get crispy. Boil 2 pounds of potatoes in 2 quarts of water with 3 tablespoons of kosher salt and 1/2 teaspoon of baking soda. As soon as the water starts to boil check to see if the potatoes are tender and drain them right away. Gently shake the potatoes in the strainer to rough up the surface of the potatoes. Coat the potatoes with 1 to 2 tablespoons of oil ( I use vegetable oil) Season the potatoes with 1 teaspoon of kosher salt 1 teaspoon of granulated garlic ¹/² teaspoon granulated onion 1 teaspoon of paprika 1 teaspoon of dried chives (optional) preheat your air fryer to 425 degrees then roast the potatoes for 18 to 25 minutes turning the potatoes if necessary.
