BROCCOLI CHICKPEA CASSEROLE full recipe here 🔗 https://youtu.be/by8If7g4rtE SUNDUBU JJIGAE 1 tbsp oil 1 small onion, diced 1 red bell pepper 3 tbsp gochujang 1 tbsp mirin 3 tbsp soy sauce 1 bundle enoki mushrooms, bottom 2 inches sliced off 1 pound shiitake mushrooms, sliced 2 to 3 cups chopped veggies (zucchini, broccoli, bok choy, etc.) 3 cups broth (veggie, mushroom or kombu) 1 block silken tofu, sliced into large cubes 1. Saute onion in oil until softened. Stir in the gochujang and let it brown slightly to develop flavour. 2. Deglaze the pan with the mirin and soy sauce, then add the shiitake mushrooms and half the enoki mushrooms. Stir to combine and let cook for 4 to 5 minutes. Add the bell pepper and cook for 2 mins until softened slightly. 3. Pour in the broth, stir, cover and let cook for 5 to 6 minutes. Add the remaining enoki mushrooms, and bok choy and let the bok choy wilt for a couple minutes. Add the silken tofu and let warm through for a couple minutes. Taste and adjust seasonings if you like. 4. Garnish with chopped green onions and enjoy! VEGGIE 'EGG' CUPS 1 tbsp oil 1 small onion, diced 1 red bell pepper diced 1 cup broccoli, cut into small florets 2 cups chickpea flour 1 tsp garlic powder 1 tsp onion powder ½ tsp turmeric 1 tsp kala namak (black salt) 1 tsp chili flakes (more or less depending on your spice preference) 1 tsp baking powder ½ cup vegan cheese (optional) 2 cups aquafaba (canned chickpea liquid) or water 1.Preheat oven to 400F and lightly oil a muffin tin. Warm oil in a saute pan and cook veggies until tender, about 4 to 5 minutes. Remove from pan. 2. In a large mixing bowl combine the chickpea flour, spices and baking powder and whisk until well incorporated. Pour in the aquafaba and and whisk until it's a smooth batter with no lumps. Fold in the cooked veggies. 3. Pour ¼ cup portions of the mixture into each muffin cup and bake for 30 minutes, until golden, firm to the touch and the edges are slightly crispy. 4. Let cool in the pan for 10 minutes, then remove the veggie cups and transfer to a cooling rack. Enjoy warm! LEMON LIME COCONUT CHIA PUDDING Zest of a 1 small lemon & 1 small lime Juice of 1 small lemon & 1 small lime 1 can full fat coconut milk, about 1½ cups ¼ cup water 3 tbsp maple syrup ¼ tsp salt ¼ tsp turmeric 5 to 6 tbsp chia seeds Combine all ingredients minus chia seeds in blender and blend until smooth. Add chia seeds and pulse a few times until incorporated. Pour into sealable container and refrigerate overnight until set and firmed up. ORANGE MAPLE TAHINI DRESSING 3 tbsp olive oil ¼ cup orange juice 3 to 4 tbsp apple cider vinegar 2 tbsp maple syrup 1 tbsp tahini 1 tbsp dijon mustard TOFU FETA 1 block extra firm tofu, cut into cubes 1 tbsp miso paste ¼ cup water 1 tbsp olive oil 1 tbsp apple cider vinegar or lemon juice ½ tsp dried oregano ½ tsp dried basil ¼ tsp salt pepper to taste Combine all marinade ingredients. Place tofu cubes in a sealable container and pour over marinade. Seal the lid and give it a toss to coat.
