Today on Southern Accent Foods I'll show you how to make an easy recipe for zucchini fritters. ------- Key Moments: 00:00 Introduction 00:12 Preparing the zucchini 02:02 Cooking the zucchini fritters 02:30 Presentation _______ Zucchini Fritters 2-2½ lbs zucchini, ends removed, grated Salt, black pepper, and (optional) cayenne pepper 2 tablespoons chopped chives, plus more for garnish 2 eggs ¾ cup AP flour ¼ cup grated Parmesan cheese 1 teaspoon baking powder 2 tablespoons Canola oil plus more if needed Sour cream for dipping and garnish Place grated zucchini into a strainer or colander set over a large bowl. Season with 2-3 teaspoons of salt, stir together, and let sit for 10-15 minutes to remove excess moisture. Squeeze handfuls of grated zucchini to wring out any remaining water, and set aside in another large bowl. Alternatively, wrap handfuls of zucchini in a clean kitchen towel and twist to wring out the water. Stir two tablespoons chopped chives and 2 eggs into grated zucchini. In a medium bowl, stir together ¾ cup AP flour, ¼ cup grated parmesan cheese, and 1 teaspoon baking powder. Stir flour/cheese mixture into zucchini mixture until no streaks of flour remain. Heat 2 tablespoons of Canola oil in a large saute pan over medium heat. Using a medium ice cream scoop or medium spoon, transfer spoonfuls of zucchini mixture into pan and press lightly to flatten. Work in batches and don’t overcrowd the pan. Saute for 3-4 minutes a side or until nicely browned. Transfer to a platter, garnish with sour cream and reserved chopped chives, and serve.
