Today on Southern Accent Foods I'll show you how to cook an easy recipe for stuffed peppers. ------- Key Moments: 00:00 Introduction 00:12 Preparing a pepper 00:32 Sauté the stuffing ingredients 01:20 Preparing the topping 01:31 Finishing the stuffing 01:46 Stuffing and finishing the peppers 02:38 Final presentation ------- Stuffed Peppers 3 medium bell peppers, any color, halved and seeds removed 8oz spicy Italian sausage, or any good quality sausage, crumbled 1 small onion, 2 ribs celery, and 1 small bell pepper, diced small Salt, pepper, and (optional) Cajun or Creole seasoning to taste 1-2 cloves garlic, sliced or minced 1 and ½ cups cooked white rice 1 tablespoon Worcestershire sauce 2 and ½ tablespoons dried breadcrumbs 2 and ½ tablespoons grated Parmesan cheese 2 tablespoons butter, cut into small pieces Fresh parsley, minced, for garnish Sauté crumbled sausage over medium heat until browned, about 5-7 minutes. Add diced onion, celery, and bell pepper to the same pan, season with salt, pepper, and optional Cajun or Creole seasoning, and sauté until softened, about 5-7 more minutes. Add garlic and cook for 1 more minute. Remove from heat, stir in the cooked white rice, add the Worcestershire sauce, and stir to combine. Spoon the filling into the halved bell peppers. Combine breadcrumbs and grated Parmesan cheese in a small bowl. Sprinkle evenly over each stuffed bell pepper. Dot the top of each stuffed pepper with a few small pieces of butter. Bake in the center of a 400 F (200 C) oven for 20-25 minutes or until golden brown on top. Garnish with freshly minced parsley.
