Today on Southern Accent Foods I'll show you how to cook an easy recipe for scalloped potatoes. ------- Key Moments: 00:00 Introduction 00:18 Baking dish 00:32 Rub it with garlic 00:50 Yukon (Gold) Cornelius 01:02 Watch your fingers 01:25 Butter me up 01:50 Multi-layered affair 02:12 Cover me 02:24 Uncover me 02:29 Shameless self promotion 02:34 Presentation/finis SCALLOPED POTATOES (POTATO GRATIN) Inspired by Edna Lewis 3 to 4lbs Yukon Gold potatoes (or Russets) 1 clove garlic, halved 2oz (4 tablespoons) unsalted butter, melted 4oz (1/2 cup) unsalted or low-sodium chicken stock (you can substitute vegetable broth) Salt, freshly ground black pepper, and (optional) cayenne pepper, to taste Minced parsley or chopped chives for garnish Preheat your oven to 425 degrees F (220 C). Rub the bottom and side of an oval or 9 x 13 baking dish with the garlic. The object is to have the garlic almost fall apart and flavor the dish. Peel the potatoes, and slice into a medium thickness, about ¼”, or thinner if you prefer. Place the potatoes in a large bowl and pour in the melted butter. Season with the salt, black pepper, optional cayenne pepper, and toss to coat. Layer the potatoes in your baking dish and pour in the chicken stock or vegetable broth. Season the top with more freshly ground black pepper if desired. Cover with aluminum foil and place in the center of the 425-degree F (220 C) oven. Cooked covered for 45 minutes, then uncover and cook until most of the liquid has been absorbed, about 30-40 more minutes. Garnish with the parsley or chives, and serve. Potatoes can be made ahead. Let cool, cover, refrigerate overnight, and reheat the following day. Let come to room temperature and reheat in a 350-degree F (180 C) oven for about 15-20 minutes.
