Today on Southern Accent Foods I'll show you how to cook an easy recipe for red beans and rice. ------- Key Moments: 00:00 Introduction 00:18 Spill the beans 00:32 Soaker 00:55 Sausage fest 01:24 Trinity 02:03 Everybody in the pool 02:27 A stirring moment 02:48 Like white on rice 03:18 A quiet resting place 03:44 Finale RED BEANS 1 lb dried red kidney beans, picked through and soaked overnight 2 T canola oil 8-12 oz smoked sausage (such as andouille) sliced on a bias 8-12 oz smoked ham (not sweet or glazed) cubed or shredded 2 ribs celery, diced 1 medium yellow onion, diced 1 medium green bell pepper, diced 1 Fresno chili, diced small (optional, you can use any other hot pepper you like) Salt, pepper, and (optional) Cajun or Creole seasoning, to taste 2-3 cloves garlic, sliced or minced 32 oz (1 quart) chicken stock, vegetable broth, or water 2-3 dried bay leaves Chopped or sliced green onions, for garnish Place the soaked beans into a slow cooker. Add the canola oil to a large sauté pan and set to medium heat. Sauté the smoked sausage and ham until just browned and some fat has rendered. Transfer to the slow cooker with the beans. Add the celery, onion, bell pepper and optional hot pepper to the same pan with the rendered fat. Cook over medium heat until softened, stirring occasionally, about 6-7 minutes. Add the garlic and cook for 1 more minute to allow the garlic flavor to infuse. Transfer to the slow cooker with beans and smoked meat. Cover the beans, smoked meat, and vegetables with the chicken stock, vegetable broth, or water and add the bay leaves. Cover and cook on low for 4-6 hours, stirring about every 60 minutes or so. Garnish with chopped or sliced green onions and serve over cooked white rice. Beans can also be prepared in a conventional oven. After sautéing, place all ingredients in a large Dutch oven with a tight-fitting lid. Cover and cook at 300 degrees F (180 C) for about 6 hours.
