Yes, people—we are back. A bunch of y’all have been asking for a top camp cooking episode, so I pulled together my top 10 favorite camp meals for solo camping. This one’s a highlight reel of the good, the messy, and the “hands are getting cold” reality of cooking outside—whether I’m over an open fire, running a stove, or making do with what I’ve got in the truck. And like I always say: it doesn’t matter how it looks…good is good. I run through everything from pie iron sandwiches that didn’t exactly come out pretty, to venison stuffed peppers (and yes, I was pretty pleased with myself), to brats and beans that just flat out feel like camping. We get into cold-weather favorites like coconut curry chickpeas with cilantro lime rice, chunky jambalaya soup where I’m adding shrimp, onions, and sausage because I can’t leave anything alone, and a full-on Southern New Year’s supper with ham steaks, black eyed peas, collard greens, and cornbread (with a whole stick of butter—because you are watching a health food channel). We finish strong with shrimp and grits (instant grits—my fellow Southerners, have grace), biscuits and gravy in the pouring rain, and a Wagyu steak with honey balsamic Brussels sprouts that honestly might be the best steak I’ve ever had.
